ERMITAGE cuisine - pure pleasure

Fresh, regional and seasonal ingredients are very important to us. Presented to you with our own Mediterranean touch. Our first-class fish is regionally sourced from Saanen from the Hausmolkerei Schönried dairy and “Buure Metzg” village butcher. All pasta products are home-made with careful attention to detail. Our products are healthy, tasty and natural. They thus reflect the Hotel’s wellness philosophy.

As well as meat and fish dishes, we can also serve you with completely vegetarian and vegan meals every day.

If you have special wishes, allergies, prescribed nutrition or other dietary requirements, simply let us know. Please inform us in advance so that we can prepare you the tastiest solution possible.

  • «Vital Breakfast» in the «Brunnenstube» bathrobe zone from 8 to 11 a.m.

Peter Dosot - your chef de cuisine

Chef de Cuisine Peter Dosot conjures up authentic, honest Mediterranean cuisine combined with the quality and authenticity of premium products from Saanen. Six years in his own restaurant in Dolcedo, in the Liguria region, reinforced his roots as a chef. Not only was he able to gain experience with independence and the Italian mentality, he was able to delight countless guests and friends with his culinary concepts. Interspersed with international sabbaticals, Peter Dosot has been in charge of culinary excellence at the Hotel for nearly 30 years. He is part of the foundations of the Hotel, creating treats for you daily!

Breakfast - the perfect way to start your day

There is bread baked in the Hotel, a choice of local pastries, fruit, freshly pressed juices, a selection of cheeses from near and far, cold cuts, eggs, yoghurt and fresh honeycomb, just to name a few. Discover the immense variety of hot and cold dishes to guarantee you a balanced diet every day. Do you have dietary needs or other wishes? Let us know: we’re sure we can create something tasty to suit you!

Lunch

Light Lunch - fresh and healthy

In line with our freshness concept, we offer a light and balanced lunch rich in vitamins over midday. Strengthen your body with healthy salads and a tasty soup of the day. Let us welcome you to the «Brunnenstube» in your bathrobe.

Cakes

Cake buffet - sweet temptation in the afternoon

The afternoon cake buffet, our "Chueche Table" is an integral part of what makes the ERMITAGE what it is. You can choose your favourite from the fantastic selection of cakes to savour in a relaxing atmosphere accompanied by piano music. A smaller buffet with sweet snacks is also available in the “Brunnenstube” - perfect for a pick-me-up between visits to the sauna.

Dinner

ERMITAGE dinner - culinary highlight

A welcome from the Hotel, fresh salads and a selection of delicious starters, mains and desserts set the pulse of every gourmet racing. Let the day come to a harmonious end in one of our seven parlours. Friday and Saturday evenings, Chef de Cuisine Peter Dosot invites you to the “Chef's Table”. Be culinarily spoiled by him in person in our kitchen. As this is very popular, we encourage you to make an early reservation. In the winter months, enjoy a traditional fondue mix from the Schönried dairy in the “Carnotzet”.
